Soda bread :)

So it's a sunny Sunday afternoon here in Oz, so I thought I would treat his indoors (Acker my dear hubby) to a little bit of old Ireland. Namely, some wheaten soda bread. Mmm, me thinks, what to go with this? Ah ha! He likes chilli and I need to use up the rest of last night's chook...we went Dutch on a chook. So chillie chicken and soda bread looked pretty good.

Only glitch, not the taste but this was a heavy meal for a 'light lunch'! His indoors had to have a little nana nap to recover. His dish was wiped clean and he ate far too much soda bread. I have no sympathy for him.

Stuff
250g whole meal flour
250g porridge Oates
420ml butter milk (I used milk, a healthy dollop of Greek yoghurt and dash of white vinegar)
2 tsp bi carb soda
1 tsp salt

Mix it up!
Mix dry ingredients, then add milk mixture. This is a sticky scone mixture - your hands will get icky, you're warned. Bake @ 200 degrees for about 20 mins, depends on how big you make your bread. Enough for 2 small or 1 whopper!
